Origin of word Barbeque
With first Spanish new world settlers, a meat preserved in the sun was found. This ancient method is almost universal. The main problem seemed to be meat spoiling and populated with bugs. To diminish that small smoky fires were built by the natives and the meat was placed over it.
This is considered to be an origin of Barbeque, both in process and in name. In the West Indies a word "barbacoa" is used to describe this process. General stand is, that this is the origin of word Barbecue, still heavy debates are over this subject.
Mainly slaves and poor people would use this type of meat preparation with leftovers in early colonial times. Better quality meat had no need to be processed this way. Barbeque was considered inexpensive food source back than.
But remember, meat had to be cooked or eaten quickly or preserved with smoking process right after slaughter.
Smoking was the most effective way . The well used practice was cold smoked meat, the meat was dried on the sun and preserved by the addition of smoke.
Spicing was another option. Spicing is a process using lots of salt and afterwards dry the meat to lower the ability of contamination.
However, barbeque was not invented in America and no one knows who invented the barbeque. The word 'Barbecue' might come from the Taino Indian word 'barbacoa' meaning meat-smoking apparatus. 'Barbecue' could have also arrive from the French word "Barbe a queue" which means "whiskers-to-tail." The correct origin remains hidden.
Nowadays, barbeque recipes, barbeque sauces and bbq cookboks are a part of international cousine. No one seems to be wondering, how did the the meat get to the table.
